A 100% Chardonnay Méthode Cap Classique made from grapes grown in Robertson’s limestone soils. Only the premium juice is selected for this wine, 50% of which was fermented in Piece Champenoise barrels to ensure richness and an added dimension of flavour.
After blending this wood-matured wine with Chardonnay fermented in stainless steel, the wine was bottled for the second fermentation with yeast contact for at least 36 months. The result is a complex, full-bodied sparkling wine with yeasty aromas and a creamy complexity on the palate.
